Chinese Chicken Salad

Salad: |
2 chicken breasts, poached or broiled, cut into 1/2" pieces |
1/4 Romaine lettuce, cut into 1" pieces |
1/3 Napa cabbage, thinly sliced |
green onions |
cilantro |
toasted almonds |
sesame seeds |
Assemble salad ingredients. Add dressing to desired taste. Toss. |
Dressing: |
1/2 cup soy sauce |
1/2 cup red wine vinegar |
1/2 cup sugar |
Bring to a boil, then add 1/4 cup vegetable oil and 1/4 cup sesame oil. Bring to a boil, then chill. The dressing can be kept in refrigerator for a couple of months. |
